Thai Sauce, Noodles & Vegetable Recipe with Essential Oils

I started making this recipe a few years ago and I have many variations.  The following is the one that has become my favorite.
Prepare Rice Noodles according to package directions.

Sautee onions, garlic, celery, mushrooms, tofu or chicken or shrimp according to your preference. Add in whatever other vegetables you prefer like Bok Choy, Corn, Snap Peas, etc.

Steam carrots separately since they take longer to cook than the other vegetables. Once cooked, add the carrots into the mix of onions, celery, etc.

Add Ginger essential oil to taste.  I like to use about 8-10 drops.  I like a zippy taste. Stir in and mix well, turning the heat on low.  Stir occasionally.

The Thai Sauce;

Soften about 4 heaping tablespoons of Peanut Butter by adding in water and mixing. Once the Peanut Butter is like a soft paste that can be stirred, set this aside.
Lightly sauté garlic in vegetable oil.   I like using Toasted Sesame Oil for this part as it adds in great flavor.

Mix in 1 can of Coconut Milk, 4 Tablespoons of Soy Sauce, 1-2 Tablespoons of Agave, salt and pepper to taste.  You can use either Light Coconut Milk or Regular.  The regular gives a thicker, creamier consistency.
Add 5-15 drops of Essential Oils of Orange and Lemongrass to taste.  Again, I like a zippy taste, so I use about 15 drops.

Mix Thai Sauce in with vegetables and stir well.

Add Vegetables and Thai Sauce over the noodles and serve.

The taste improves after refrigerating for leftovers.

All essential oils referred to in this article are Therapeutic Grade Essential Oils from Young Living Essential Oils.  I only recommend using Therapeutic grade essential oils for internal use.
